Easy Peanut Butter Cookies

My gift to you; the easiest cookie recipe under the sun!

For those of you craving home made cookies and want to skip complicated then this is the cookie for you. Not only are they simple to make but they are pretty yummy. Did I mention they are gluten free? I can hear you heading towards your kitchen already.

What you’ll need:

  • 1 cup peanut butter
  • 1 cup brown sugar
  • 1 egg

Preheat oven to 350 degrees. Mix the ingredients in a bowl until creamy.  Roll into 1″ balls.  With the back of a fork press down, then press again from the other side to form the criss-cross pattern on top (dip the fork in sugar for an extra bit of sparkle before pressing).

Bake for 8-10 minutes or until golden brown. Everyone’s oven is different so timing may be a bit off. Let them cool on the cookie sheet for a few minutes before moving to a wire rack to finish cooling if they last that long. Honestly, these cookies are heavenly warm from the oven. Especially with a glass of milk or a cup of tea.
